Is soy lecithin a healthy choice?
Customers occasionally ask, us whether soy is "safe" or not. I have read much conflicting information about soy;
some seem to promote its healthy benefits while others suggests its
dangers. I honestly do not know what to believe. I have had friends
that say they got significant relief from menopause issues once they
added soy to their diets. Some of the negative research that I read did
seem to base there studies on products that I do not think are healthy
anyway (such as soy baby formula). Again I think if we eat the real
food there is probably no need to be concerned. The lecithin we sell is
from soy, so if you have concerns I would avoid it. It does make the
bread very soft. There is lecithin in whole grains already so it does
not need to be added for nutritional reasons. A health practitioner
that I know that does have concerns about soy and even has a child with
soy allergies says the child can use the soy lecithin that we carry with
no problems.
You will have to be your own judge here. You can certainly make great
bread without it.
