Nutrition of Kamut

There's a link to the USDA's Agricultural Research Service Nutrient Data Laboratory at the foot of our website home page. You'll find detailed nutrition data there for Kamut.

The Beckers had loaves made from freshly milled flour tested and the lab was astounded; 1 slice of our Honey Whole Wheat bread contains 30 IU's of Vitamin E giving you 100% of your Daily Value. (please see www.therealbreadcompany.com for further details)

We haven't had any Kamut loaves tested but know from Medallion Lab's Oct. '88 analysis that Kamut has an overall nutritional superiority to common wheats (hard red/white, soft red/white, duram). The protein level tends to be higher (17%-18%) and its significantly higher in total lipids which are higher in energy than carbs or proteins. Kamut is 30% higher in vitamin E than common wheat and has more calcium, iron, magnesium, fatty acids, etc., while having slightly lower levels of B5, B6, and folacin.
