We haven't had any Kamut loaves tested but know from Medallion Lab's Oct. '88 analysis that Kamut has an overall nutritional superiority to common wheats (hard red/white, soft red/white, duram). The protein level tends to be higher (17%-18%) and its significantly higher in total lipids which are higher in energy than carbs or proteins. Kamut is 30% higher in vitamin E than common wheat and has more calcium, iron, magnesium, fatty acids, etc., while having slightly lower levels of B5, B6, and folacin.
