Which mixer: Electrolux vs. Bosch Compact or Universal vs. Zojirushi?
Our recommendation on mixing methods involves 4 options, a great bread machine or 1 of 3 mixers. The choice is yours; capacity is a primary consideration for most. Our Basic Bread Dough also serves as the Bread Machine Recipe. A single recipe yields 2 -1 lb. (8") loaves, or 1 -2 lb. (12") loaf.
1. For the greatest capacity (a quadruple recipe of our Basic Bread Dough or up to 15 lbs. of dough), the Electrolux is great and offers a lifetime of durability for most. We highly recommend the Electrolux for several reasons: a) it yields the softest possible dough (therefore delicious soft bread) using a roller and scraper because less flour is required than with mixers with dough hooks b) it has a great deal of power but uses little electricity c) it can handle large amounts of dough day in and day out; we often say with great confidence, "it will be the last mixer you'll buy" because it is so durable d) the need for replacement parts is rare e) several great attachments are available for additional uses.
2. The Bosch Compact can handle a double recipe of the Basic Bread dough, is lightweight and requires little counter space. It is sold as a set including a blender, slicer and shredder as well as the dough hook. It's ergonomic design mixes all the way around the bowl thoroughly. It is lightweight and easy to use, requiring minimal counter space.
3. The Bosch Universal is the larger Bosch mixer which can handle a triple recipe of our basic bread dough (approximately 12-13 cups flour). It uses a double dough hook which spans across the bundt shaped bowl. It is available with or without the blender attachment.
3. Another option is the Zojirushi bread machine. The standard full sized machine makes a generous 2 lb. loaf from start to finish in about 2 1/2 hours. The delay cycle (up to 13 hours) allows one to start bread in the a.m. to be ready to serve at dinner, or begin in the evening and enjoy at breakfast. It also has a quick dough cycle; ready in just 45 minutes. Simply remove the dough after the first rising (a series of beeps lets you know it's ready!) and shape it into pizza crust, dinner rolls, or whatever, rise until doubled; bake in the oven.
